Harvest Wife Saver: A Big Cooking Day

A Big Cooking Day
I had a BIG cooking day yesterday. Harley dug a hill of potatoes and 6 carrots. I pulled up a large yellow onion. Then I proceeded to make my own invented recipe. I call it Harvest Wife Saver.
Harvest Wife Saver Recipe
Thaw 4 cobs of blanched frozen corn. Preheat oven to 350 F. In a Dutch oven on top of the stove melt 1 stick of butter. Chop onion medium to coarse. Brown the onions. Scrub the potatoes. Peel the carrots. Chop the potatoes into 1 inch cubes. Chop the carrots. Place all of the vegetables into the Dutch oven. Salt, pepper and dill. Mix thoroughly. Bake for 40 minutes. Chop one or two crowns of chopped raw broccoli. Add to mixture. Bake for another 30 minutes. When the corn is thawed, slice the kernels off of the cob. Hold the cob so you don't cut yourself. I use a Cutco knife. I don't know the name of it. But it has a thin, long blade. I usually use it to cut raw meat. Then turn the knife on the dull edge and scrape the remaining partial kernels. Add the corn to the finished dish. Mix well.
Drained Canned Corn Works Too
Drained canned corn works well. This can be served as a vegetarian dish. I served mine with a side of heated leftover chicken. This recipe is so large that when cool can be frozen in meal sized portions.
Bone Broth and Borscht
While I prepared the Wife Saver, I made bone broth, being sure to add 1/4 cup of vinegar to leach the minerals out of the bones. Making borscht today!
Cajun Spiced Rolled Chicken Sandwiches
Harley is going combining today. I will make him Cajun spiced rolled chicken sandwiches from Your Weight Loss Companion. You roll pickle, red pepper slices and onions or your choice of veggies into the deli meat. Place the meat/veggie roll onto buttered bread that has been spread with mayo or McDonalds Chicken Spread. Cut the sandwich between the rolls. While making the sandwiches, I'll sing Sandwich Queen to the tune of Dancing Queen! In my head, of course!!! ABBA what great voices!!!
